FRUITY PECAN PIE


INGREDIENTS

3 eggs
3/4 cup light corn syrup
1/2 cup sugar
3 tbsp brown sugar
3 tbsp orange juice
2 tbsp butter, melted
1 tsp grated orange peel
1/8 tsp salt
1 1/2 cups chopped pecans
2/3 cup flaked coconut
1 unbaked pastry shell (9 inch)

DIRECTIONS

1. Preheat oven to 350° F.

2. In a large bowl, beat eggs, corn syrup, granulated sugar, brown sugar, orange juice,
butter, orange peel and salt until
well blended. Stir in pecans and coconut.

3. Pour into pastry shell. Bake 50 to 60 minutes or until
a knife inserted near the center comes out clean.
Cover edges with foil during last 15 minutes to prevent over browning if necessary.
Cool on a wire rack.

Yield: 8 servings
